Dive into a world of flavour with this delicious, nutritious and low-calorie vegan duck stir-fry 🌱 Packed with veggies and served with Slendier Konjac Rice, enjoy a high-protein and low-carb dish that tastes great too! 🌱 Ingredients - @Slendier Konjac Rice, washed and drained - 250g button mushrooms, chopped - 1x packet of vegan duck, roughly chopped - 1 head of broccoli, chopped - 2 bunches choy sum, chopped - 2 bunches pak choy, chopped - 1 carrot, peeled - 2 celery sticks, chopped - 2 garlic cloves, crushed 🍲 Sauce - 1/4 cup plum sauce - 1/2 cup soy sauce - 1 tbsp vegan fysh sauce - 1 tbsp rice vinegar - Juice of 1 lemon 🧑‍🍳Method In a large pan on medium heat, sauté onion, mushrooms and garlic for 5 minutes. Meanwhile, in a bowl, whisk together the sauce ingredients. ➡️ Cook vegan duck in an air fryer, pan fry, or bake in oven until slightly crispy. ➡️ Once the onion, mushroom and garlic are cooked well, add choy sum, pak choy, broccoli, carrot and celery. Mix well and cook on high heat for 5 minutes. ➡️ Add sauce, vegan duck and konjac rice to pan and mix well. Leave on high heat for another 5 minutes.
