We use a very special kind of charcoal here at Yen Yakiniku. It is made from compressed wood chips, similar to binchotan from Japan. The main difference is that it is made from pressuring wood chips at two levels of temperature (300~700’c). The smokeless and odorless charcoal not only browns the meat evenly, but imparts into the meat an extra smoky essence.
